Chocolate Chocolate Cupcakes


(makes about 16 cupcakes)

Cupcakes
1/2 cup cocoa powder
1 cup boiling hot water
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract

Preheat oven to 375 degrees F.
Combine the cocoa powder and boiling water and stir until completely dissolved.
Combine all dry ingredients in another bowl (flour, baking powder, salt)
In a 3rd bowl, add in sugar and softened butter and mix with mixer until dissolved.
Add in the eggs and vanilla extract and mix with mixer.
Slowly add in dry ingredients to the 3rd bowl, while mixing slowly.
Finally, add in the cocoa mixture to the 3rd bowl to make one whole mixture.
Pour mixture into cupcake cups and place in the oven.
Bake for 18-20 minutes.

Frosting
4 ounces unsweetened chocolate
2/3 cup unsalted butter
1 1/3 cups confectioners sugar
1 teaspoons vanilla extract

Melt butter and beat with mixer for 2 minutes.
Combine sugar and beat with mixer for 3 minutes.
Add in vanilla extract and melted unsweetened chocolate and beat with mixer for 3 more minutes.
The consistency should be creamy with a bit of fluff.

After taking the cupcakes out of the oven, let them sit out for 30 minutes before frosting them. It's probably one of the most AMAZING cupcakes you'll ever taste! AND don't be cheap about frosting the cupcakes if you're a frosting lover. Cake it on!

Brownie Souffle'

(makes about 4 souffles)

1/2 cup butter
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Preheat oven to 350 degrees F.
Mix together butter and sugar with mixer.
Add in eggs one by one, while continuously mixing.
Add in the rest of the ingredients and mix thoroughly.
Pour into souffle dishes, half way filled.
Bake for 20 minutes at 350 degrees F.

Chocolate Chunk Cookies


3 cups of all-purpose flour

2 tsp salt

1 1/4 tsp baking soda

2 cups of semisweet chocolate chunks

2 sticks unsalted butter

1 cup light brown sugar

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract


Preheat oven to 350 degrees F.

Combine brown sugar, granulated sugar and butter.

While mixing with mixer, add in eggs.

Add in vanilla, baking soda, and salt. Continue mixing.

Add in the flour a bit at a time while continuously mixing.

Finally, mix in the chocolate chunks.

Use an ice cream scooper to make each cookie on the baking sheet.

You may fit up to 12 cookies per baking sheet. The mix should make 24 cookies.

Bake for 15 minutes. Bon Appetit!

Carrot Cake

2 cups of all-purpose flour
1/2 cup grated carrots
1/2 cup processed walnuts
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon salt
1 cup of sugar
1/4 cup of light brown sugar
3 large eggs
6 ounces plain yogurt
6 ounces melted unsalted butter
pam spray for the pan
Cream Cheese Frosting (optional)

Preheat over to 350 degrees F
mix together flour, baking powder, baking soda, spices, salt, carrots and walnuts in the bowl, stir with a spoon
in a separate bowl, mix together sugar, brown sugar, eggs, yogurt, and butter... mix with a mixer
Combine dry ingredients to wet ingredients slowly, while continuously mixing
Pam the bottom and sides of your selected pan (I use a bunt cake pan)
Pour mix in pan and bake for 45 minutes on 350 degrees F
After the 45 minutes, decrease to 325 degrees F and bake for another 10 minutes.
Take it out, let it cool, and frost it with cream cheese if you please! Bon Appetit!
